Just so you know, unless I am baking, I don't measure ANYTHING (and even the baking is a stretch). I am horrible at following recipes, and often find myself combining recipes or just making my own.  I think cooking should be about originality and spontaneity. No dish should ever taste exactly the same twice. Where's the fun in that?
That being said, all of these recipes have estimated measurements. But don't be afraid! It's ok to guess. A little more olive oil here and a dash more of pepper there is what makes your food unique. So go ahead, get cooking and be creative!
